Mayonnaise is one of the most beloved condiments in the world, with several interesting theories about its origin. It is believed that mayonnaise dates back to the 18th century and is thought to have been created by the chef of Duke de Richelieu after the capture of the port of Mahón in Spain. The chef made the sauce using ingredients he had on hand: eggs and oil and named it “mahonnaise” after the captured port.
Another popular theory suggests that the roots of mayonnaise came from French cuisine and that it was first named in 1806. It is believed that mayonnaise was developed from earlier sauces such as aioli or remoulade.
Regardless of the exact origin of mayonnaise, it has become a favorite ingredient in kitchens and meals around the world, known for its creamy texture and versatile use in various dishes.
History of Felix mayonnaise
The journey of Felix Mayonnaise has also been quite long and interesting. Production started in 1997 under AS Põltsamaa Felix, and Põltsamaa mayonnaise was introduced to the market.
In February 2000, AS Põltsamaa Felix acquired the then market leader Formeer mayonnaise brand and moved the production from Tallinn to Põltsamaa.
In 2009, all AS Põltsamaa Felix mayonnaises underwent a renewal, and all Formeer mayonnaises produced in Põltsamaa were brought under the Felix brand.
In 2012, Felix Classic mayonnaise was awarded the title of the tastiest mayonnaise in Estonia by the Food and Fermentation Technology Development Center in Tallinn, and it is still available in Felix’s product range today.
At the beginning of 2025, Felix refreshed its product range and introduced Felix Premium mayonnaise, created for the true gourmets, with an exceptionally thick consistency, very tasty and melts in the mouth. High-quality raw materials give this mayonnaise its authentic taste.
